POM Wonderful Brownies

A few weeks ago the people at POM Wonderful asked if they could send us some bottles of POM juice to experiment with in recipes. Who are we to turn down free stuff? It’s a recession y’all! Rest assured we would never spend the time blogging about something that  we didn’t feel the need to share with our readers, but the POM recipe was, well, wonderful! First up, Double Chocolate Pom Brownies. I’ve been wanting to make brownies for while now and due to a time crunch yesterday I needed to make something quick and easy. Bars and brownies are the perfect quick baking fix because they don’t require shaping dough or frosting (normally). You just whip up the batter and pour it in a pan–for this reason, I am bar obsessed. I also love bars because I feel like you can throw as much chocolate, sugar, and candy in them and they’ll always turn out scrumdiddly-yum-cious. I am for sure on my way to getting diabetes. Here’s another pre-blog era baked good: Cookie Brownies. I’ve been meaning to post these for like months now, 6 months to be exact since we started this thing on March 27 of this year! The only thing that’d be better than these is if I had an intern…seriously. Anyone interested? These are one of my favorite things that I make and usually my taste testers favorite as well. I have been known to eat a sickening amount of these, even more so than other treats which is saying something. I have also been known to say “there is something in these! Something addicting! Opium! I don’t know what it is but something”. This is most likely my excuse for eating a pan full of these, but I stand by my claim. They’re the most addicting thing I bake. So dangerous. Guess what else? Okay a quick post because I’m tired and gotta watch Mad Men from last night. As I said in my last post I did a bit of cookbook shopping last week! After some Amazoning I made out like a bandit with Martha Stewart’s Cupcakes and The Gourmet Cookbook. I held off buying Martha’s book because I was resisting more of the cupcake rage…but I finally gave in. Oh, am I glad I did! This book is filled with beautiful, irresistible pictures of delicious looking cupcakes. I want to try them all they’re SO pretty! I think half the reason I love this book is because the food styling and photography is incredible. Plus it’s by Martha so 9/10 you’re gonna get a winning recipe. The Gourmet cookbook I raved about in my post from the Rice’s cocktail party, I haven’t had time to make anything from it yet but everything from the cocktail party was amazing and I have like 100 post it notes stuck in it already.  So what about these Mint-Filled Brownie Cupcakes? …

Brownie Krispies & musings on life, food, and this little thing

First let me apologize for my absence this week, I have been taking a summer course (dread) and had my final on Wednesday. Woohoo! Done and done, though it did lead to some neglect in the kitchen and therefore the blog. Okay onto more important things. Disclaimer: I may get a bit gushy/long winded/over dramatic/flowery in this post, I apologize ahead of time. I had the pleasure of seeing the new film Julie & Julia on Wednesday night. I have to be honest, I don’t have the temperament for seeing movies. I am way too anxiety ridden to sit in a dark theatre for two hours because the only things that go through my mind are all of the things I should be doing instead of seeing a movie. My to do list constantly runs through my mind. That being said, I repeat that I had the pleasure of seeing J&J. It was heart-warming, funny, beautiful, entertaining, and thought provoking. Lookie at my Cookies: Best Brownies

I hadn’t intended on blogging about these brownies but after one bite of the perfect textured fudgey chocolatey wonderful brownie I decided it was my duty to share the Best Brownies with the world. For the past few days I have been baking myself out of my apartment…meaning I have been baking anything and everything to try and use up ingredients before I move out (today eek!). Mainly this includes left over cake flour, butter, and eggs. Also since everything else is packed I only had my muffin pan and a spatula out, no measuring utensils, no whisk, nothing…it was brutal. Yet, I managed to bake a few things and they all turned out well. I now have more faith in my palette for butter and sugar! I needed to use up some cocoa powder too so I searched for brownies made with cocoa powder and found this recipe that seemed perfect for all my needs.  As you can see, I made the brownies in a muffin pan so they were more like 2 bite brownies. I have to credit my mom for this recipe, think of it as an early Mother’s Day thank you. My mom is a former gourmet chef/caterer so I grew up having home cooked meals almost every night. I feel so fortunate that my mom was able to pass on her love for food to me and my siblings. She’s an amazing woman who I am continually inspired by and she’s a damn good cook! Since I can remember I’ve been spoiled by my mom with family dinners, pound cake, banana bread, and these Neiman Marcus Brownies that I am about to share with you. I have helped my mom make these a few times and consumed a TON of them over the course of my 19 (20 tomorrow!) years. As a college student craving a taste of home, I finally made them all by myself! Lookie at my Cookies: Quintuple Chocolate Brownies

A few months ago when I first started baking seriously, I decided I wanted to hit the books- cookbooks that is. I ordered a few that I thought to be the “Bibles” of the cooking world, among those was Dorie Greenspan’s Baking From My Home to Yours. If I could recommend one baking cookbook it would be this one, order it! I have been lost in the glossy pages filled with beautiful pictures for weeks now. Dorie I love you. I have about a million recipes marked in this book to try but here’s the first one I am blogging about, Quintuple Chocolate Brownies. Not double, not triple, not quadruple, but QUINTUPLE. Crazy, it should be illegal, except it’s delicious!  These brownies live up to the amazing taste that their name implies; they are the best fancy brownies I have ever had. I say the best fancy brownies because I’m still on a search for the perfect traditional brownies, no fancy stuff added. Lookie at my Cookies: Peanut Butter Cup Brownies

Eat your heart out Reese’s, there’s a new peanut butter cup in town. I am convinced peanut butter and chocolate were made for each other, like Charlie and Claire on LOST–I’m only on Season 2 right now but someone please tell me they have gotten together. I find that a lot of my baked creations involve these two perfect ingredients because they are two of my favorite foods…they actually might be my MOST favorite foods. Needless to say, the combination of flavors when peanut butter and chocolate meet is heavenly. Salty meets sweet, mmm delicious.  My Peanut Butter Cup Brownies were adapted from a recipe found on Bake or Break, I opted to use milk chocolate chips instead of the peanut butter chips for a little different flavor. I loved the sweet smoothness of the milk chocolate in the brownie, it provided a nice contrast to the semi-sweet chips. The generous dollop of melted peanut butter in the middle of the brownie was just enough for me, I think any more would have been a PB overload …
