Chocolate Chip Cookie Cupcakes

I have raved about Martha Stewart’s Cupcake Book and I will get up on my soapbox again: the book is amazing! Not only are the recipes fantastic but also the food photography is some of the best I have seen. I wish I had HALF the talent of the photographers that put together this book. Seriously, when I flip through the pages of the glossy cupcake recipe filled book I am half drooling over the food and half drooling over the photography chops. When I look back through the photographs I have taken over the course of this blog I feel like I took much better pictures at the beginning. Weird considering I have learned more about composition and photo editing throughout the time we’ve had the blog, and we even got a photo light to help us out! Frustrating. I think I did better when I didn’t realize there was any skill to taking the photos, and I didn’t rely on editing to get better pictures. Grrrrr. How do y’all get good pictures? I …

  So Welcome Week is officially over and school has started. Meaning we are now trying to piece together our schedules and figure out where to fit in time for friends as well. So far it’s going pretty well, except for the whole class thing. I think this is the least prepared I have been for school–normally I spend hours in Staples picking out school supplies like an excited middle schooler. This year…not so much. I had to call friends for an SOS to look at my schedule for me and figure out what room/time I had class. Oops! Oh well, it’s kind of liberating actually.   So far classes are looking pretty good. Okay a quick post because I’m tired and gotta watch Mad Men from last night. As I said in my last post I did a bit of cookbook shopping last week! After some Amazoning I made out like a bandit with Martha Stewart’s Cupcakes and The Gourmet Cookbook. I held off buying Martha’s book because I was resisting more of the cupcake rage…but I finally gave in. Oh, am I glad I did! This book is filled with beautiful, irresistible pictures of delicious looking cupcakes. I want to try them all they’re SO pretty! I think half the reason I love this book is because the food styling and photography is incredible. Plus it’s by Martha so 9/10 you’re gonna get a winning recipe. The Gourmet cookbook I raved about in my post from the Rice’s cocktail party, I haven’t had time to make anything from it yet but everything from the cocktail party was amazing and I have like 100 post it notes stuck in it already.  So what about these Mint-Filled Brownie Cupcakes? …

I have had Devil’s Food Chocolate cupcakes on my urgent list of things to bake for like a week now, other baked goods just kept coming up and I had to keep putting them off, well I am glad I finally got around to making them. I found this Flour Frosting–yes, I did mean to say Flour Frosting, it has flour in it–on How to Eat a Cupcake like a week ago and have been itching to make it ever since. Let me explain…I am very pretentious about frosting. It can make or break a baked good. In my case it usually breaks it, because I happen to LOVE store bought frosting. I know there is nothing but a bunch of chemicals in Betty Crocker’s Rainbow Chip Frosting but I really don’t care. It’s amazing. There is nothing that can compare to it. I don’t really like buttercream icing because it tastes too much like butter and I love cream cheese frosting but it doesn’t go with everything. BUT store bought frosting (such as the …

Vanilla bean ice cream and other vanilla bean flavored things are my favorite! The simple flavor of vanilla is so often lost when it is mixed into more complicated things, sometimes it’s good to go back to the basics. In this case, Vanilla Bean Cupcakes with Vanilla Bean Buttercream Frosting. I think my next project is gonna be to make a vanilla bean pound cake YUM! The cupcakes turned out so great………except for the frosting. It’s official…buttercream frosting and me do not get along. I don’t know what it is! About 75% of the time my buttercream frostings come out fine, then there’s that pesky 25% that separate and turn into more of a glaze-UGH, frustrating. It seems that sometimes my butter just doesn’t want to be perfectly room temperature to mix together with the rest of the frosting ingredients. WELL I am a failure at buttercream so it’s a good thing I like cream cheese based frosting much better. I hadn’t intended on blogging about these brownies but after one bite of the perfect textured fudgey chocolatey wonderful brownie I decided it was my duty to share the Best Brownies with the world. For the past few days I have been baking myself out of my apartment…meaning I have been baking anything and everything to try and use up ingredients before I move out (today eek!). Mainly this includes left over cake flour, butter, and eggs. Also since everything else is packed I only had my muffin pan and a spatula out, no measuring utensils, no whisk, nothing…it was brutal. Yet, I managed to bake a few things and they all turned out well. I now have more faith in my palette for butter and sugar! I needed to use up some cocoa powder too so I searched for brownies made with cocoa powder and found this recipe that seemed perfect for all my needs.  As you can see, I made the brownies in a muffin pan so they were more like 2 bite brownies. I’ve already said that I love Holidays, and lucky for me (and you) there are two big ones coming up: Passover and Easter! Nosh and Tell will be celebrating both because I celebrate Easter and Ariel observes Passover. Double the holidays, double the treats, double the fun! To get in the Easter spirit I made Martha Stewart’s Carrot Cupcakes. Her recipe is actually for Carrot-Ginger Cupcakes but I omitted the ginger because I didn’t know if the Easter Bunny would appreciate the added flavor and I’m not a fan of ginger. Top 5 things I have ever baked: these cupcakes. After eating these, I just had one question…WHAT did the world do without Martha while she was in jail? Thank goodness home girl bounced back and is better than ever. I could not be happier that I bought into the Martha enterprise and now own her Baking Handbook.
