Peanut Butter Crispy Bars

Back in September (feels like yesterday, really it’s December?!) I went to the famous Baked Bakery in Brooklyn. Uhhhh so good. [moment to remember the amazingness that is Baked]. I tried about 15 different delectable items and all of them were memorable but I think my favorite by far were the Peanut Butter Crispy Bars. I have said many a time that PB+choco happens to be my favorite combination. It’s just natural that the two things go together. Like Diet Coke and me, like Vodka and soda, like Don & Betty Draper (well that’s not a great example), like Juliette & Sawyer on LOST, like Ron & Hermoine and like cream and…well…everything.  Needless to say these PB Crispy Bars get the job done. The bars might seem intimidating, yes you may have to whip out the candy thermometer, but they’re rather easy once you get down to it. And there’s actually no baking involved. Chocolate Peanut Butter Chip Cookies

They look boring, but looks can be deceiving. Especially in the case of these cookies. Turns out Chocolate Peanut Butter Chip Cookies are anything but boring. They were amazing. Ridiculously easy, and absolutely delicious. When I saw these on A Bird in the Kitchen I knew that they needed to be part of my cooking baking craze on Sunday night. I’m not sure I can sum it up better than SweetBird does: “Put away your bathroom scale. Break out the fat pants with the elastic waistband. These cookies are going to rock your world”. Rock your world they will. These cookies are not for the nibblers out there. They aren’t for the “Okayyy, but only just ONE” type. I’m going to put this out there: you won’t be able to eat just one bite, or just one cookie, prepare to make a meal out of them. They’re just too good for self control. HELLO! Sorry all, we had to take a hiatus from the blog for a bit due to our extremely hectic schedules over the past week. No worries, we are back and here to stay–we missed y’all! It’s too bad school has to come first sometimes, ah well, such is life.Since we were MIA, here’s a quick recap of our past week:1. We started our second kitchen fire–I say we, but really it was just me…as I was cooking for my sorority rush I decided to jump in the shower to make myself presentable. Got out and of course I see smoke billowing from the oven. I open the oven and my pigs in a blanket are ON FIRE–despair. The piggies got pretty soggy when I had to throw water on them to put out the fire but I managed to salvage some from a previous batch. Oh well.2. Lookie at my Cookies: Peanut Butter Munchies

I try and keep a good amount of variety in things I bake from week to week. For instance, I recently baked a cake and before that, my favorite bars. So the next thing I bake shouldn’t be either of those things…leaving me with a cookie. Well I love cookies, I love anything with sugar in it, but it’s hard because I really gravitate toward brownies/bars. I don’t know if it’s because they are easier to make but I just love the dense flavor filled bite that you get when you first dig into a bar or a brownie, there is nothing like it! Other than alternating categories when I am baking (from cake, to bar, to brownie/bar, to cookie, to cupcake, etc.) I really give myself free range over what I bake, except I can’t double post something on the blog. Hm. This became a problem when Ariel and I were sitting in the kitchen discussing what I should bake that night. Peanut Butter Munchies were my solution–aptly named because you cannot have just …

Lookie at my Cookies: Butterfinger Bars

One night this weekend Ariel and I had been tastespotting for a dangerous amount of time, this led to many intense cravings and a brutal 30 minutes of indecision on which urge to follow. In the end Ariel decided to make some sort of pasta and I decided to make something with peanut butter and chocolate (as usual). Introducing, Butterfinger Bars! Not quite as good as the candy–personally I’m partial to the tons of sugar, preservatives, and chemicals found in packaged junk food–but they definitely hit the spot! I found these on Katie Blair Designs and was salivating as soon as I saw the pictures. The Butterfinger Bars did not disappoint. After a quick trip to the grocery I whipped these up in no time, they were really really easy to make–the hardest part was waiting for them to cool! Impatient as I am, I stuck them in the freezer because I was dying for a taste of the Butterfinger Bars. The cookie/blondie part is peanut buttery and delicious. Lookie at my Cookies: Double Chocolate Covered Pretzel Peanut Butter Cookies

Double Chocolate Covered Pretzel Peanut Butter Cookies, whew! That’s a mouthful and these cookies definitely were! As you can see they are chocolate peanut butter cookies with white chocolate chips and chocolate covered pretzels. I knew they would be good when I tried them, but I didn’t realize just HOW fantastic they would actually be.I found these super chunk cookies on Picky Palate. She suggested to use Trader Joe’s Chocolate Covered Pretzel Slims, I used The Snack Factory’s Chocolate Covered Pretzel Thins and I thin they’re pretty close to the TJ’s brand. In any case, they tasted great in the cookies! The chocolate from the pretzels melts off and into the cookie and adds to the already amazing chocolate and PB flavors. The white chocolate chips are the second chocolate in this cookie, I happen to be on a major white chocolate kick lately so the sweet punch from this chocolate is very welcome. Then we get to the actual pretzel thins, the crunch from the pretzel makes this cookies unique and and gives it lots of spunk, …

Lookie at my Cookies: Peanut Butter Cup Brownies

Eat your heart out Reese’s, there’s a new peanut butter cup in town. I am convinced peanut butter and chocolate were made for each other, like Charlie and Claire on LOST–I’m only on Season 2 right now but someone please tell me they have gotten together. I find that a lot of my baked creations involve these two perfect ingredients because they are two of my favorite foods…they actually might be my MOST favorite foods. Needless to say, the combination of flavors when peanut butter and chocolate meet is heavenly. Salty meets sweet, mmm delicious.  My Peanut Butter Cup Brownies were adapted from a recipe found on Bake or Break, I opted to use milk chocolate chips instead of the peanut butter chips for a little different flavor. I loved the sweet smoothness of the milk chocolate in the brownie, it provided a nice contrast to the semi-sweet chips. The generous dollop of melted peanut butter in the middle of the brownie was just enough for me, I think any more would have been a PB overload …
