Lookie at my Cookies: Peanut Butter Candy Bar Bars, the Bars that started a blog

I owe these delicious looking bars Peanut Butter Candy Bar Bars a lot, other than the 5 pounds I think I have gained from eating them. I credit them and my friend Liz, to encouraging me to start this blog! Let me explain. One day I’m sitting in my room with Liz, on the computer while simultaneously watching TV, avoiding doing homework, and/or going to class. Liz is an avid user of Stumbleupon.com and one day she “stumbled” upon Tastespotting. She quickly alerted me because I love making and eating food. It was love at first sight. I quickly became addicted to Tastespotting and other food porn sites like it.  I had never seen a food blog before this, it was like a whole new world had been opened up to me. Double Chocolate Covered Pretzel Peanut Butter Cookies, whew! That’s a mouthful and these cookies definitely were! As you can see they are chocolate peanut butter cookies with white chocolate chips and chocolate covered pretzels. I knew they would be good when I tried them, but I didn’t realize just HOW fantastic they would actually be.I found these super chunk cookies on Picky Palate. She suggested to use Trader Joe’s Chocolate Covered Pretzel Slims, I used The Snack Factory’s Chocolate Covered Pretzel Thins and I thin they’re pretty close to the TJ’s brand. In any case, they tasted great in the cookies! The chocolate from the pretzels melts off and into the cookie and adds to the already amazing chocolate and PB flavors. The white chocolate chips are the second chocolate in this cookie, I happen to be on a major white chocolate kick lately so the sweet punch from this chocolate is very welcome. One of the down falls of going to college is missing out on Girl Scout Cookie season. I used to beg my mom not to order any Thin Mints or Samoas because the cookies always curiously arrive around Spring Break and bikini season…how cruel. Now that I don’t live at home when Girl Scout Cookies are ordered, I don’t even have the chance to protest, and I don’t get to enjoy the cookies when they are delivered because no matter how many times I tell my mom not to order them, she always does. I consider my hometown of Nashville, Tennessee to have quite the selection of foodie worthy restaurants. Just wait until I’m home this summer and I start frequenting all my favorites, I’ll have y’all convinced you need to take a trip to “Country Music USA” just to do a restaurant tour. Ask any of my friends and they will tell you I am obsessed with everything about Nashville including it’s restaurant scene. This recipe originates as a copy of a dessert served at Nashville’s own Jackson’s Bar and Bistro. I was first exposed to the Cookie Dough Egg Rolls on a dinner out with some girlfriends and I never forgot them, neither will you after this post. I used to visit Jackson’s just to order this dessert but then my friend Addie told me she was cooking them up in her own kitchen! How convenient!
