Whit’s Tidbits: Three S Vegetable Salad

Three S Vegetable Salad: Spinach, Squash, and Sundried Tomatoes. Yes, it really is that easy. I used 3 ingredients in this warm veggie salad and added a little lemon pepper to taste, voila: an easy side dish for lunch or dinner! It’s even great re-heated the next day, or cold straight from the fridge. I used to abhor spinach–I refused to eat it up until like a month ago. Any salad with spinach leaves, ANYTHING with spinach was a no no for me. Good news! I LOVE it now! I’m like Popeye, I can’t get enough spinach. I don’t mean that block of spinach you find in the freezer section in the grocery, I mean fresh spinach leaves. I have been experimenting with cooking spinach lately and I absolutely love it. I cooked this up for me and the folks for dinner the other night and we all agreed–this warm three veggie salad is delicious. Crock-it! Yumyum Vegetable Barley Soup

Crock-it! That’s right, it’s crock pot time yall!┬áMy parents gave me my beloved crock pot at the beginning of this year. And when I say they “gave” it to me, I actually mean I nagged them until they bought one for me, thanks Mom and Dad! What can I say? I’m persistent, and it’s a good thing too. I don’t know how I would’ve survived this year without it. Newsflash: we’re in a recession! There’s no shame in making a big ol’ pot of soup to slurp on for a week. It won’t break your budget OR take too much time out of your schedule because you “fix it and forget it”! Yep, I went there, it’s the official crock pot/slow cooker infomercial slogan. But it is so true. Sundays I pick a recipe, chop up all the ingredients, throw them in the pot, set it and, say it with me now, FORGET IT!
