Leftover Alert: Peppermint Bark Chunk Cookies

I’m just gonna second what Ariel said: sorrysorrysorry for not blogging. My bad. That’s really all there is to say about that–life just got in the way in the form of finals, goodbyes and packing. Yuck. You do not wanna know what our diet consisted of for that last week, no time for grocery shopping does not suit us well. But, we made it! Did you? It’s the end of ’09, that’s probably good too, but can you believe it? I think every year goes by faster. I can’t believe that this semester ended, I won’t be returning to New York, we already had Christmas, tomorrow is New Year’s Eve and I’m going to Italy in 2 weeks! Errrrrrrrrr yikes–fun, but yikes. Some parts of me, the parts that don’t crave fresh pasta, caprese salad and wine, wish it wasn’t time yet!  Oh yeah, and I hope Santa was good to y’all, I got this beautiful beautiful stand mixer I have been cherishing for like mmm a year. Loveeee it.

But before I can even think about my upcoming trip to Italia it’s time for reflection on this past year…I guess…isn’t that what people do? I’m not a resolution type because they don’t normally stick, but my friends and I do have “Buddy Goals” which we set together and try to encourage each other to do. This makes it sound admirable. I would not classify most of the goals on that list as enriching, but hey, they work! As I think back to this past year it’s pretty much a shit storm–excuse my language–but that’s about the only word to describe it. A wonderful, sometimes wonderfully terrible, fun and laughter filled shit storm…with a chance of butter and sugar. We started the blog, we overcame a LOT, we saw deaths, we saw weddings, we ate, we drank and we were very very merry. Perhaps too drunk and merry at times. Okay most of the time. But it was great. It was not the easiest year for anyone but then again when are the easy times the best? Yeah don’t answer that. But we learned. A lot. Or at least I did.

I learned the birthday girl should never have too much fun at her own BYOB dinner (oops, thanks Linds),  and in that same night I learned that Liz can be mean if she needs to push a skeezy club promoter. I learned that friends & family rock–they ground you and they just, well, rock. I learned that butter always has to be at just the right temperature that the recipe asks for, don’t try and get around it. I learned that you should just suck it up and parchment paper the bottom of cake pans even if you use PAM spray and non-stick pans. I learned that working 3 jobs (plus positions in a sorority and this blog) and being a full-time student at NYU can be DONE! Ha! I did it! I learned that there is NEVER an end all be all in matters of fun, love, happiness and laughter. And most importantly I think I learned about strength and true happiness. I guarantee you have more strength than you could EVER imagine and we should never stop seeking happiness. That doesn’t mean never stop and smell the roses but go out there and do whatever it takes to make you happy! You only live once.

Aaaaand in an effort to use up leftovers, I put chunks of peppermint bark in my chocolate chip cookies! They were so festive and really delicious, put them on your list for next year or use up those left overs QUICK!

Peppermint Bark Chunk Cookies
Makes about 2 dozen

About 1 cup of broken up peppermint bark
6 oz chocolate chips
1 1/2 cup all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup butter (room temp)
3/4 tsp vanilla
1 egg

Preheat oven to 350 degrees F. Place sugars, butter, eggs and vanilla in mixer bowl. Blend for 2 minutes.

Sift flour, salt and baking soda together. Add to butter mixture and mix until just combined.

Stir in chocolate chips and peppermint bark by hand. Drop on baking sheets by spoonfuls.

Bake at 350 degrees F. for 8 to 10 minutes. Cool on baking sheet for about 1 minute. Remove to wire rack to finish cooling.

  1. Is it wrong that despite the fact that I have a gorgeous kitchenaid mixer in red, I’m now coveting your blue one? And really wanting one of these cookies…genius! And really, really wanting to sneak into your suitcase for Italy. Fresh. Made. Pasta.
