Lookie at my Cookies: Berry Loaf

Since I have been home from college things have been a little different–basically I mean living with parents again. I love my parents, but it’s hard going from living independently to living with people who forget that for 8 months out of the year you are a fully functioning independent person. No offense Mom and Dad! Specifically, my parents have been griping about me baking all the time. I guess they didn’t believe that I actually bake 4-5 times a week–or they probably just don’t have time to read the blog very often, ha I guess we’ll find out! All that aside, my Dad requested something with less sugar and suggested I bake a bread. Well I have a sweet tooth so I compromised and baked a Berry Loaf.

I wanted to use up berries that I had left over from my Fruit Pizza and take advantage of having my Mom’s loaf pans so baking a Berry Loaf seemed like the perfect solution. It’s kind of a cross between a bread and a cake…it is denser than cake and a lot less sweet, but it’s not quite like bread. Over all I was pleased with the way the Berry Loaf turned out, it’s great with a little vanilla ice cream or cool whip. It was tasty, just not out of this world…probably because I wanted it to taste like CAKE! (Sorry Dad you have not converted me to a non-sweets lover) It’s a good use of extra ingredients and a quick simple dessert or sweet breakfast!

Light Berry Loaf
Adapted from Recipe Zaar
1/3 cup light cream cheese*
3/4 cup sugar, divided into two bowls*
2 egg whites
2 grated lemon rinds
1 cup flour, divided plus 2 tsp flour
1/2 tsp baking soda
1/3 cup fat free sour cream
3 cups mixed berries
*Healthy Swaps: I used non-fat vanilla yogurt instead of cream cheese. I also used 1/2 cup of sugar in the cake and then used Splenda to toss with the berries.
Preheat oven to 350 degrees and grease and flour a 9x5x2.5 loaf pan, set aside.
With an electric mixer beat together the cream cheese and half the sugar in a large bowl. Mix in egg whites and lemon peel. Then in a separate bowl add 1 cup of flour and baking soda, mix well. Add the flour mixture to the cream cheese mixture alternating with the sour cream. Make sure to mix well after each addition.
Pour the cream cheese mixture into the cake pan. 
Toss berries with the left over 1/4 cup of sugar and 2 tsp of flour. Then pour on top of batter.
Bake for 40-45 minutes. Cool Completely. Garnish with berries and powdered sugar. It is good served cold or slightly warm.

    Oh this look different. Im so tired of cooking and eating the same things. I will try this tomorrow morning with just strawberries since I have all the ingredients already and I dont like blueberries or raspberries…

    Very pretty and it sounds yummy too! Living on your own for a while and then living back with your parents can be tough.
