I went to an all girls high school, and I loved every minute of it. With no boys around we wore absolutely no make up, rolled out of bed, threw on our uniforms, and went to school each day. We played ridiculous pranks on each other, had so much fun, laughed a lot, and ate a ton! I think I gained the “Freshman 15” my Freshman year of high school–no joke. I didn’t really think about it at the time but a lot of our events at school were centered around food. We had weekly advisory meetings where a group of us who shared an advisor would get together, talk, and feast. Advisory happens to be where I picked up my habit of dipping butter cookies into a tub of icing–yum! It was actually gross how much food we would consume in a half an hour…but it was so good. And of course there’s the whole school lunch cuisine. We were lucky enough to have a great dining hall at school–almost too great. By senior year most of us had to switch to bringing our lunches to avoid the calories of tea cakes, chicken patties, and the greatest dessert ever: Chocolate Chip Pie. Mmmm.
Each morning the lunch menu would be a part of the announcements read out in the morning, and each morning all of us would tune out all the hum drum boring school business until LUNCH. Most importantly: dessert. If it was Chocolate Chip Pie day, it was a great day.
I’m not kidding, we were food obsessed. Maybe it was the fact that we could stuff our faces without worrying about what boys were thinking, or maybe it was the fact that our Campbell Plaid uniform skirts still fit us throughout an array of size changes over the course of four years. Whatever it was it taught me about good food, and it stuck with me. As I was trying to get some baking inspiration Chocolate Chip Pie popped into my mind. Probably because you could practically hear the cheers throughout the hallways when people discovered it was CC Pie day, but also because it is so good. It’s basically like a half baked chocolate chip cookie in a pie crust. Divine. I started my Google searching for a decent CC Pie recipe and found Bakerella’s version. I liked the pie a lot but it’s not quite perfect. This one baked up more than I wanted it to and was closer to a chess pie with chocolate chips…good, but not the texture I want! I’m gonna keep looking to get a recipe closer to an unbaked cookie texture and as soon as I find it I’ll be sure to rave about it on here. Until then, try this one! It’s a big melted chocolate, cookie, pastry shell mess of deliciousness. Enjoy with a glass of milk!
Chocolate Chip Cookie
Adapted from Bakerella
1 unbaked 9-inch (4-cup volume) deep-dish pie shell*
2 large eggs*
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter*, softened
1 cup (6 ounces) semi-sweet chocolate morsels
1 cup chopped pecans
Serve with ice cream (optional)
*Healthy Swaps: fat free egg substitute or egg whites and light butter.
Preheat oven 325 degrees F.
Beat eggs in large mixer bowl on high until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts and spoon into pie shell.
Bake for 55-60 minutes. Cool on wire rack. Serve warm.
