Lookie at my Cookies: Fruit Pizza

I’m finally posting something fruity and healthy-er! I am a big chocolate lover if you hadn’t guessed, but something not previously represented in my baking for this blog is my love for fruit. This Fruit Pizza is sure to have you and all who indulge in it satisfied without feeling sick or guilty for eating something with a million grams of fat. I mean it has fruit on top so it’s healthy right? Just kidding! But it really isn’t too bad for you…I made mine with low fat cream cheese and cut out half the sugar in the icing, if you wanted to make it even healthier you could use low fat yogurt or non-fat cream cheese.This Fruit Pizza is delicious, refreshing, SO EASY, and really fun to make! Definitely a kid friendly recipe. I actually made these with my Brownie Troupe when I was little, I’m pretty sure we started a food fight though. I had a great time figuring out how to design my fruit on top…I wanna take all the fruit pieces off and do it again! I have made fruit pizza a few times, sometimes using store bought sugar cookie dough and sometimes using home made. This is one of those times that I am going to say do yourself a favor and go with the store bought! You’ll save yourself time and I think the store bought cookie dough makes for a better cookie crust. Every time I use my own dough from scratch the fruit juices seep in and it gets soggy–yuck. Enjoy being “Semi-Homemade” like Sandra Lee and leave the crust to Pillsbury–no need to re-invent the wheel here!Fruit Pizza is the perfect dessert or snack for summer. It’s a great way to use up extra fruit lying around. The fruit is crisp and tasty and this is one dessert that won’t weigh you down. The sugar cookie crust and cream cheese frosting are light, sweet and delicious and go great with the fruit topping. Memorial Day is coming up and this is great for barbecues and pool parties! You can even decorate it with red and blue berries so it’s festive. 

Fruit Pizza

1 package store bought sugar cookie dough
1 8 oz package of cream cheese*
1 cup confectioner’s sugar*
1 box strawberries
1 box of blueberries
1 box of raspberries
2 peaches
Green grapes
Note: this is the fruit I used, feel free to substitute any other fruits in! They all work well.
*Healthy Swaps: I used Neufchatel Cream Cheese (1/3 less fat) but you could even use non fat. I also only used 1/2 cup of sugar.
Preheat oven to 350 degrees. Grease or line a cookie sheet with parchment paper, set aside.
Roll out the cookie dough onto a floured surface with a rolling pin that has been floured. Continue to roll the dough out working it into a circle shape until you have a pizza large enough to your liking, just remember it has to fit on your cookie sheet! Transfer the dough to prepared cookie sheet and bake for 10-12 minutes or until the edges are browned. Transfer to a wire rack and cool completely.
In a medium bowl using a hand mixer on medium speed blend together the sugar and cream cheese until light. Spread the frosting evenly over your prepared pizza sugar cookie crust. Chop and slice the fruit any way you like and top your pizza!

    i’ll always remember when you made me fruit pizza. I enjoyed it thoroughly although it was a little soggy but it was still really good. The new one looks much improved, good work
