Lookie at my Cookies: Neapolitan Ice Cream Pie

I scream you scream we all scream for ICE CREAM! As I have mentioned, I LOVE ice cream. Particularly frozen yogurt (you can find my comprehensive guide to popular froyo places here) which is why I was intrigued and salivating when my sister Liz sent me a recipe from Self Magazine for Neapolitan Ice Cream Pie. Ice Cream cake might be sent straight from heaven, at least I’m sure that Baskin Robbin’s Roll Cakes are. This frozen yogurt/ice cream pie was no exception, it was amazing! I made it for dinner for my parents and aunt and uncle the other night and we all agreed it was delicious, blog worthy for sure.The Neapolitan Ice Cream Pie won’t leave you feeling guilty for indulging either because it is made with mostly frozen yogurt, a perfect ice cool treat for the summer! My friend Katie helped (or she just watched) while I made this and we agreed, it’s way easy to make, you just have to wait for each layer to harden up before you put the next one on but I don’t think it took me more than an hour to put together.The layers of strawberry, mint and chocolate ice cream melt together wonderfully and oh so tastefully. They are broken up by a graham cracker crust, heath bar pieces, and crushed oreos (another thing sent from heaven I’m convinced). This ice cream pie has got a lot goin’ on and it works! It’s sososo good. I accidentally ate the three pieces I cut to take pictures of …oops. SIDENOTE: okay WEIRD I hear the ice cream truck driving around my neighborhood right now…I have ESP with all ice cream I just love it that much. Anyway, the Neapolitan Ice Cream Pie is definitely worth trying out, it’s super easy and will impress your BBQ guests even though it doesn’t take very long to throw together. The only thing I would say is that if you want a crust that actually holds together, add a tablespoon or 2 extra of butter to the crust. The recipe calls for only two tablespoons and the crust was pretty much graham cracker crumbs, not really binded together. But it still tasted amazing! Thanks sissy for sending me the recipe!

Neapolitan Ice Cream Pie
9 graham crackers*
2 tbsp melted butter (as I said you might want to use more)
1 1/2 cups non-fat strawberry frozen yogurt, softened
1/2 Heath Bar broken into small pieces
1 1/2 cups mint ice cream, softened
1 1/2 cups crushed Oreos*
1 1/2 cups non-fat chocolate frozen yogurt, softened
4 fresh strawberries, halved
*Healthy Swaps: I used low fat graham crackers and reduced fat Oreos.
Combine crackers and melted butter in a food processor. Press mixture into a 9 inch deep dish pie pan to form a crust. Chill in freezer for 20 minutes. Remove, spread strawberry frozen yogurt over crust. Sprinkle Heath Bar pieces on top. Freeze until firm. Remove. Spread layer of mint ice cream over frozen yogurt layer, sprinkle 1 cup of the crushed Oreos on top. Freeze until firm. Remove. Spread a layer of chocolate frozen yogurt on the ice cream layer. Freeze until firm. Sprinkle remaining Oreos over top and garnish each piece with half of a strawberry.

    Ooh, I love and prefer frozen yogurt as well! This looks great. I just made a KILLER ice cream dessert for my son's birthday (June 3 post). I didn't eat any because it was all full fat ice cream, but it was fun to make and I'd make it again for someone cutting fat and calories and use all frozen yogurt/fat free ice cream. Yummy Neopolitan!

    mmmmm, I'm an ice cream lover from waaaaaaaay back! This looks just about perfect. Though I think I'd prefer it with some vanilla or sweet cream ice cream!
