Just in time for Halloween: Peanut Butter Spider Blossoms! I have been meaning to get to my Halloween baking but am just now getting around to it. I made these Pumpkin Chocolate Chip Bars with Cinnamon Cream Cheese Frosting a while ago but now the holiday is almost upon us! What are you being?
We had our first of many Halloween parties this past weekend and dressed up as a few of the decades, but this weekend we’re gonna be really creative. Especially for Thursday for our LAUNCH PARTY! To kick off the week these cookies were fantastic! I created them by putting together a few recipes I found. I made the cookies using Land O’Lakes recipe for Peanut Blossom Cookies and then loosely adapted Betty Crocker’s recipe to jazz them up into spiders! They turned out even better than I imagined. The cookies were really easy and a one-bowler, my favorite. Less mess, less time doing dishes later. Then to make them into spiders I pressed Rolo’s in the middle like a blossom cookie, cut up some Rainbow Twizzlers into smaller pieces and pressed them in, and then put some Tic-Tac eyes on. Easy and SO cute. I can’t believe I’m saying spiders are cute because I absolutely HATE spiders. I mean who doesn’t, but really, I have been known to have a major screaming crying fit when in the presence of these eight legged animals. Ewwwww I just got goose bumps. Notice my cookies only have six legs…
Not only are these cookies uber festive and adorable. They also taste awesome! The cookie is the perfect texture: crispy on the outside and chewy on the inside. The chocolate and caramel from the Rolo melts into the peanut butter cookie base making for a delicious and creamy flavor. Yum I’m gonna have to get another now. For me, Halloween is great, but what’s even better is that I can start listening to CHRISTMAS MUSIC the day after Halloween! WOOO my self-imposed date of Nov. 1 can’t come soon enough. Mariah Carey “All I Want for Christmas” will soon be my ringtone, my cinnamon scented candle will be lit at all times, and Love Actually will be in my DVD player. Ah I love the Holidays. Peanut Butter Spider Blossoms
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup (1 stick) butter, room temp
1/2 cup peanut butter
1 tsp vanilla
1/4 tsp salt
1 3/4 cups all-purpose flour
1 tsp baking soda
1/4 cup sugar
1 bag Rolo’s
Twizzlers (I used the Rainbow colored variety)
Black food coloring pen
Heat oven to 375 degrees F. Combine both sugars, butter, and peanut butter in a large bowl. Beat at medium speed until light and fluffy. Add egg, vanilla, and salt, continue beating until well mixed. Add flour and baking soda. Continue beating, scraping bowl often, until well mixed.
Shape dough into 1 inch balls, roll in the 1/4 cup remaining sugar. Place 2 inches apart on cookie sheets.
Bake for 8-10 minutes or until very lightly golden brown. Immediately press 1 Rolo in the center of each cookie. Remove from cookie sheets, cool for 5 minutes and then place cut twizzlers under the slightly melted Rolo candy. Then press in your colored Tic Tac eyes! Cool completely.
